Here is an easy recipe for New Year’s Oyster stew to bring a little bit of luck. This recipe makes enough stew to serve at least 4 people.
(I did not take pictures this year, as I did not decide to record this recipe until a day after I made it. Whoops.)
Ingredients:
- 1 qt. Whipping Cream
- 2 8 oz. Cans Oysters
- 4 Potatoes
- Salt and Pepper to taste (the more the merrier)
Instructions:
- Chop potatoes into small pieces and add to large soup pan. Cover potatoes in cream.
- Warm potatoes and cream over gentle heat while stirring constantly. Add undrained oysters.
- Continue stirring and heating stew until it is hot throughout and potatoes are thoroughly cooked (about 20 minutes). Add salt and pepper to taste.
- Enjoy immediately.
