Chicken and Zoodles with Garlic Olive Oil

Do you love pasta, but want something a bit more nutritionally sound?  This recipe is low on calories and carbs, but high on flavor and vegetables.4653E89B-12F8-438F-9EEA-1133EF664678

Ingredients:

  • 1 Chicken Thigh per Person
  • 10 Cloves Garlic
  • ½ Cup Olive Oil
  • 1 Medium Zucchini per Person (or 4 Small Zucchini)
  • Salt, Pepper, and Chili Powder to Taste
  • Generous Amount of Parmesan Cheese
  • Small Handful Flat-leaf Parsley

Instructions:

  1. Either bake or pan-fry chicken until mostly cooked, then cut into pieces.B58610FF-FBCC-48F4-9E35-24758D795781
  2. Peel and mince garlic. Brown in pan with chicken over medium low heat.  Keep warm until ready to be used.84A3CF09-2B4E-4D22-B7AA-7A4AAE190AFC
  3. Spiralize zucchini. If you do not have a spiralizer, you may cut zucchini into thin strips instead.71DD90B8-BB95-4B24-B92A-4FA19DDB61F8
  4. Cook zucchini in a dash of olive oil with salt, pepper, and chili powder to taste. For firmer zoodles, cook in a thin layer for only 2 minutes or less.  For softer, more pasta-like zoodles, more zoodles may be cooked at once for more time until soft throughout.8E8EFA8A-D268-4035-A41F-24F697F9DA2B
  5. When zoodles are cooked, place in bowl and mix with chicken-olive oil sauce, parmesan, and parsley.
