Do you love pasta, but want something a bit more nutritionally sound? This recipe is low on calories and carbs, but high on flavor and vegetables.
Ingredients:
- 1 Chicken Thigh per Person
- 10 Cloves Garlic
- ½ Cup Olive Oil
- 1 Medium Zucchini per Person (or 4 Small Zucchini)
- Salt, Pepper, and Chili Powder to Taste
- Generous Amount of Parmesan Cheese
- Small Handful Flat-leaf Parsley
Instructions:
- Either bake or pan-fry chicken until mostly cooked, then cut into pieces.
- Peel and mince garlic. Brown in pan with chicken over medium low heat. Keep warm until ready to be used.
- Spiralize zucchini. If you do not have a spiralizer, you may cut zucchini into thin strips instead.
- Cook zucchini in a dash of olive oil with salt, pepper, and chili powder to taste. For firmer zoodles, cook in a thin layer for only 2 minutes or less. For softer, more pasta-like zoodles, more zoodles may be cooked at once for more time until soft throughout.
- When zoodles are cooked, place in bowl and mix with chicken-olive oil sauce, parmesan, and parsley.
This recipe is also delicious with regular pasta.
