Whole Wheat Bread

For those of you who enjoy baking, here is a bread recipe that makes two loaves at once.  The original version of this recipe dates back to 1953, so several changes have been made to adapt it to a modern kitchen.  Be warned:  this took me 5 hours to make, so save it for a weekend.

  • 1 Package Active Dry Yeast
  • 2 Tbsp Sugar
  • 2 Tsp. Salt
  • 4 C. All-Purpose Flour (The original recipe says this needs to be sifted, but I forgot to do this and mine turned out fine)
  • 4 C. Whole Wheat Flour
  • ½ C. Brown Sugar (Packed)
  • 3 Tbsp. Shortening

Instructions:

  1. Add 2 C. 110°F water to a medium-sized bowl (110°F should be about the highest temperature you can get from your kitchen tap, but use a thermometer just to be sure). Add yeast, salt, and all-purpose flour to water.  Beat until smooth.  Cover and place in a warm place for 1 hour.  In the 1950’s this warm place was a gas oven with the pilot light turned on and a pan of water under the dough.  For the modern era, we recommend placing it next to your video game consul while you play a game advanced enough to make it overheat.image
  2. About 20 minutes before the dough has finished rising, place shortening and brown sugar in a small metal bowl with ½ C. water. Place the bowl into a saucepan filled with water and boil while whisking the shortening-sugar mixture until everything is dissolved.  Let cool.img_3189
  3. Add shortening-sugar mixture to dough and stir. After this, slowly add the whole wheat flower and mix until smooth.img_3190
  4. Turn the dough onto a lightly floured surface and knead for 10 minutes (until smooth). If you have difficulty with it being too crumbly, add a small additional amount of water during this step.  If it is too sticky, add a small amount of additional flour until the desired consistency is reached.img_3193
  5. Place dough into a greased bowl, and turn the dough in the bowl so that all sides of the dough are greased. Cover with kitchen towel, place dough next to your consul (or in another warm place) and play video games for about 1 hour (dough should double in size).image
  6. Knead dough and cut in half with a knife. Shape each half into a ball, and return to the greased bowl.  Return bowl to consul and let rise for 10 minutes.  During the 10 minutes, grease 2 loaf pans.img_3195
  7. Roll out dough and break any bubbles in the surface. When flattened, roll each like a jellyroll and place in a loaf pan.  Tuck the ends and edges under the loaf for a neat crust.  Cover with towel and place in a warm place for 1 hour (loaves should double in size).img_3196img_3197img_3199
  8. Bake bread at 375°F for 30-50 minutes, depending on your oven.image
